Pan Fried Cod
A traditional Greek dish for the 25th of March!
Ingredients for the fish

2 lbs of cod fillets

all purpose flower
-
breadcrumbs
-
sesame
-
Olea Estates organic EVOO for drizzle and frying
- Black pepper
Ingredients for the garlic dip

6 medium size potatoes
-
6 garlic cloves
-
2 Tbsp red vinegar
-
juice from 1/2 lemon
-
1/2 cup of Olea Gold Organic EVOO
Instructions for the fish

In a non-stick pan add enough oil and set it at high heat to use for frying (not need for much oil, you will not deep fry)

Cut the cod in large pieces and add salt on both sides
- Throw some flour on them, pass them through the egg and then to the mixture of breadcrumbs/sesame making sure the whole surface of the fillet is covered
- When the oil is ready, fry them from the one side till they get golden brown and then turn them to the other side.
Instructions for the garlic dip

Boil the potatoes till they get soft and fully cooked

Remove the skin and cut them in pieces
- Put them in a blender with the garlic cloves and mix at high speed. Slowly add the olive oil, vinegar and lemon juice.
- Continue till all the ingedients are well mixed
Serve with greens and oven potatoes (we suggest to drizzle the potatoes with Olea Gold and Olea sea salt w/ paprika). Enjoy!
