Kagianas (gr. καγιανάς)
A traditional Greek appetizer!
Ingredients

2 eggs, beaten

1 medium onion, chopped fine

2 medium ripe tomatoes, grated

Olea oregano, Olea sea salt and black pepper to taste
- Kefalotyri (greek sheep cheese) or use any other hard yellow cheese or feta
Instructions

In a non-stick pan sauté the onions with the olive oil under medium heat

When onions are turning color add the tomatoes, salt, oregano and black pepper
- When most of the juice has evaporated add the vinegar
- When the liguid is reduced add the eggs and let it cook while stiring
- Add the cheese and take it off the heat, let the cheese melt while stiring
